On page 98 of the manual it says that the maximum number of RTD temperature sensors is 4
Is this per RTD Amplifier or total the software can keep track of - as all the Arduino boards list 4 as the maximum?
I don't think I need more than 4 for my system but if I hook my keezer or a fermentation fridge up to the interface i'd like to know if i'll need a different style of temperature probe or just another Amplifier board?

I think I have answered my question by looking at the Interface wiring maps where I think I see that I could have up to 14 wired to I/O pins? Or is that just my choice of pin?

You can have as many as I/O in the interface wiring map that show R as the code. Sorry about that in the manual!
