I've finally got my rig up and running, it's a 10 gal 240V system, currently RIMS but will be switching to HERMS. It was originally built by someone else for BrewTroller, but I switched to Brucontrol (zero regrets there). I'm running Brucontrol on a Mac with VirtualBox, it's working nicely.

I cannot figure out how to tune the PID algorithms. I've read all the background material, I've tried quite a range of values, and the system seems to consistently settle 30F above my target.

That is odd. Do you have an linear offset calibration set up anywhere in the sensor or PID?

I figured it out, I misconfigured the 1-wire temp sensors.
